Ingredients
- 1 medium-large courgette
- feta to taste (about half a block)
- red onion to taste
- mint or basil to taste
- extra virgin olive oil to taste
- salt to taste

Prep the courgette. Wash 1 medium-large courgette and slice it thinly lengthwise, using a mandoline or a peeler. The last slices you’ll have to wing it with a knife — they won’t all come out perfect, that’s the truth! For a prettier presentation, after slicing, if the courgette is thick, cut the slices in half lengthwise: you’ll end up rolling them like spaghetti!

Prep the onion. Slice red onion very finely, so you can scatter it and “crumble” it over the courgettes without overpowering them.

Prep the herbs. Roughly chop mint or basil to taste.

Assemble. Put the courgettes in the bowl, add the onion and herbs. Crumble feta on top to taste (about half a block).

Dress. Add extra virgin olive oil and salt to taste. Toss gently so you don’t break the slices.
Let it rest for 5–10 minutes before serving so the flavours come together. Also works well as a side or a light starter.
